Sandwich Biscuits with Peanut Butter Filling

Many recipes for peanut butter biscuits exist, but there are not that many for sandwich biscuits with peanut butter. Therefore we created this recipe for sandwich biscuits with a delicious peanut butter filling. And they’ll be ready within an hour. From experience they’ll disappear really quick, so it’s probably smart to make a couple more. Just in case!

PERFECT WITH OUR PEANUT BUTTER

Double the amount, double the taste, double-decker.

  • YOU NEED
  • 260 g flour
  • 50 g cocoa powder
  • 170 g cream cheese, at room temperature
  • 35 g softened unsalted butter
  • 330 g icing sugar
  • ½ jar of Mister Kitchen’s Peanut butter Salty Caramel
  • 1 tsp coarse sea salt
  • 1 tsp baking soda

  • 200 g cane sugar
  • 110 g softened unsalted butter
  • 1 egg
  • 200 ml buttermilk (0,5 % fat)
  • Baking paper

Bereiding

PREPARATION BISCUITS

  1. Preheat the oven to 175 °C.
  2. Line two baking trays with baking paper.
  3. Mix cocoa powder with flour, baking soda and a pinch of salt in a bowl.
  4. Whisk sugar and butter with a mixer until the mixture is creamy.
  5. Add the egg and whisk well.
  6. Add your flour mixture.
  7. Add the buttermilk and mix until smooth.
  8. Use a tablespoon to place small piles of the mixture onto the baking trays, about 5 cm apart.
  9. Bake them in the oven for 10 minutes (the biscuits should only give a little when you press them).
  10. Let the biscuits cool down.

PREPARATION PEANUT BUTTER FILLING

  1. Whisk cream cheese and butter with electric mixer until creamy.
  2. Successively add one third of the icing sugar (previous load needs to be mixed in well before adding the next load).
  3. Add peanut butter and salt and whisk for a few more minutes at high speed.

Now that both main biscuit ingredients are ready, it’s time to combine then. Teamwork makes the dream work. Scoop a small ping-pong-sized ball of filling onto a biscuit. Press a biscuit of about the same size on top. There you have it!
